Members of Fauquier Springs have come to know that Thursday is Happy Hour Night. In the spirit of staying fresh and new, we are please to add a Raw Bar offering on the first and third Thursdays of each month. Fresh shucked oysters are now available by the piece in addition to special pricing on other appetizing specials and select beverages from the bar.
The Raw Bar offers seasonal selections of fresh oysters served with traditional accompaniments. The Raw Bar is open to all so whether you are looking for a couple of "shooters" or prefer a full fresh dozen before dinner, the choice is yours!
Below is information on origin and flavor profiles of some of the oysters we will be featuring this year. We work closely with our fresh seafood supplier to ensure the best of the best is available.
Choptank - Choptank are a robust, meaty oyster with a rich creamy texture. They have a sweet buttery flavor with a crisp finish. The moderate salinity of the Choptank ensures that the flavor is not overburdened with saltiness, thus allowing the more subtle, and complex natural flavors of the oyster to be detected.
Chincoteague - It is a very salty oyster, generally skinny and elongated.
Blue Point - An exceptional oyster with a crisp texture, gorgeous salinity and whispers of celery on the finish.
Wellfleet - Wellfleet oysters have been considered some of the world’s best for generations. The Wellfleet oyster is an eastern oyster. They are plump and clean with a distinctively good balance of creamy sweetness and brine.
Old Salts - Old Salts are a Virginia Oyster grown at the mouth of the Rappahannock River. They are much higher in salt content verses a traditional Chesapeake Oyster.
